The ocean-to-table program at Costa di Mare reels in as many as 40 to 50 species of fish and shellfish daily – all line caught and sustainably sourced. The restaurant is widely known for its live langoustine program, bringing fresh, live (never frozen!) langoustines to the Mojave desert. Costa is one of only ten restaurants on earth to import these rare treasures, sourced from a top secret, undisclosed location in the Northern Adriatic.
Among the dishes guests keep returning to over and over are the char-grilled Ligurian octopus with cranberry beans, escarole and lemon; the house made garganelli pasta with red and blue shrimp, lobster, crab, white wine and tomato; and the salt-crusted, whole roasted fish for sharing. LoRusso has also introduced a crudo tasting – Italy’s answer to sashimi, that features pristine cuttlefish, prawns, Sicilian amberjack and other selections.
Returning guests appreciate the family-style dishes, such as the famous whole roasted fish, that are offered as part of the Gran Menu di Mare feast of dishes. You’ll experience a number of LoRusso’s signature seafood dishes and house made pastas, as well as a dazzling array of desserts.
You’ll find a vast selection of Capri-inspired cocktails, but for something truly unique try the house specialty – “Fish Out of Water” – made from Wynn Select Patrón Reposado Tequila, Amaro Zucca, Mirto Verde Liqueur, prickly pear, lime and fresh oregano.
