Sartiano's Italian Steakhouse brings together soulful Italian cooking and the spirit of a classic Las Vegas steakhouse. An arcade of arches, brass detailing, soaring vaulted ceilings, and views of Wynn Golf Club create a dramatic setting inspired by mid-century Milanese design.

Directed by three-time James Beard Award winner Alfred Portale and led by Executive Chef Michael Rubinstein, the menu draws from restaurateur Scott Sartiano's Neapolitan heritage, signature dishes from Sartiano's New York flagship, and a distinctive bistecca program featuring prime cuts and American Wagyu. Handmade pastas, seafood towers, tableside presentations, and an atmosphere designed for gathering make every meal feel like a celebration.

"There is a sense of mid-century refinement along with a sort of northern Italian luxury that guides each decision I make," says Sartiano's Italian Steakhouse Executive Chef Michael Rubinstein.

A Las Vegas native, Rubinstein brings more than 15 years of experience from some of the city's most influential kitchens. He trained under acclaimed chefs including Rick Moonen, Michael Mina, Pierre Gagnaire, David Chang, and Marc Vetri before leading kitchens at Momofuku Las Vegas, Majordomo Meat & Fish, and Vetri Cucina. In 2020, he became the first executive chef of the Las Vegas Raiders, overseeing the culinary program for players, coaches, and staff. At Sartiano's, Rubinstein draws on those experiences to create handmade pastas, thoughtfully sourced seafood, and dishes designed for sharing.

Where the King of Clubs Meets the Ace of Steaks

"There’s Las Vegas, and then there’s Wynn Las Vegas," says Scott Sartiano, arguably the 21st century’s most successful hospitality magnate. His company, Bond Hospitality, currently operates 10 projects, primarily in Manhattan, most notably the private members social club Zero Bond and the soulful Italian eatery Sartiano's. In March, he brought both flagship enterprises to Wynn Las Vegas: Zero Bond Las Vegas and Sartiano's Italian Steakhouse, which are adjacent and overlook the 18th fairway of Wynn Golf Club.

"We met with the Wynn people early on," Sartiano recalls. "They wanted something a little different from all the other food and beverage concepts that were in Vegas, and a members club is a relatively new concept in the United States. They thought that it was something that could work in Las Vegas, given the right opportunity. The opportunity to do something within the Wynn property was something that I couldn't pass up."
