Hospitality magnate Scott Sartiano, creator of Bond Hospitality and Zero Bond New York and Las Vegas, will debut Sartiano’s Italian Steakhouse this winter. The lively restaurant, rooted in Sartiano’s Neapolitan heritage, is a modern reinvention of the classic steakhouse, elevated by the vision of Culinary Director Alfred Portale, a three-time James Beard Foundation award winner. It will echo the spirit of its New York flagship, Sartiano’s.
Las Vegas native Chef Michael Rubinstein will helm day-to-day kitchen operations. Signature dishes from Sartiano’s New York will be featured at Sartiano’s Italian Steakhouse in Las Vegas, along with new highlights, including the Golden Osetra Caviar Cannoli with whipped mascarpone and chive; Lasagna with wild mushroom, black truffle, and Parmigiano-Reggiano; Paccheri (to share) with herbed ricotta and "Sunday sauce”; and a 40-ounce Double R Ranch dry-aged Bistecca alla Fiorentina Tomahawk, carved tableside and served with Brunello beef jus and salsa verde.
Located in an exclusive alcove overlooking Wynn Golf Club, Sartiano’s Italian Steakhouse will open adjacent to Zero Bond at Wynn Las Vegas. Wynn Design & Development, in collaboration with Tihany Design and its Principal, Alessia Genova, conceived the restaurant's design, reimagining mid-century modernism.

In The Kitchen with Michael Rubinstein
Michael Rubinstein, executive chef of Sartiano’s Italian Steakhouse at Wynn Las Vegas, specializes in handmade pasta and sustainable seafood. When creating a menu, his approach is rooted in thoughtful dishes that offer a celebratory experience.
The Las Vegas native brings over 15 years of experience in some of the industry’s most prestigious kitchens to Sartiano’s Italian Steakhouse. Rubinstein's culinary journey has led him to work with renowned chefs such as Rick Moonen, Michael Mina, Pierre Gagnaire, David Chang, and Marc Vetri.
Rubinstein has held the executive chef position at some of the city's most influential restaurants, including Momofuku Las Vegas, Majordomo Meat & Fish, and Vetri Cucina, where his innovative approach to flavor and technique gained widespread recognition. In 2020, he was named the first executive chef for the Las Vegas Raiders, overseeing the team’s culinary program created for the players, coaches, and staff.
