PISCES brings the Mediterranean coast to the Lake of Dreams—sun-soaked in spirit, effortlessly chic, and animated by the convivial glamour of seaside dining. Nights unfold over food meant to be shared, savored, and celebrated, capturing the warmth and easy sophistication of the world’s most magnetic coastal destinations.
Under Executive Chef Martin Heierling, the menu journeys from Saint-Tropez to Mykonos through chilled oysters and crudo, lavish shellfish platters, wood-fired whole fish, prime steaks, pasta, and paella.
The bar is where artful cocktails and globally inspired wines set the tone for a social rhythm that moves seamlessly from aperitivo into late evening. Guests arrive early, settle in, and stay awhile, drawn to the vibrant atmosphere.

In the Kitchen with Chef Martin Heierling
PISCES Executive Chef Martin Heierling’s 30-year career includes leadership roles in five-star hotels, such as Bellagio Las Vegas, where he opened his first restaurant, Sensi, and St. Regis in New York City, where he trained under the legendary Gray Kunz at Lespinasse. He has conceptualized and opened multiple restaurant ventures, including Silk Road at Vdara Las Vegas, and played a pivotal role in developing several global dining brands. Most recently, Heierling served as corporate executive chef of Noble 33 and, before that, as chief culinary officer of SBE and culinary director at STARR Restaurants. Heierling’s expertise has been recognized globally, earning him a Rising Star Chef nomination from StarChefs and the HAT Award from the Good Food Guide.
