As the crown jewel of Wynn’s mixology portfolio, the Monaco showcases Mercer Boarini’s artistry through sensory details that extend far beyond taste. Inspiration began with luxury yacht travel and Aft Cocktail Deck’s proximity to Wynn’s Lake of Dreams.

Featuring her signature bright-blue electric dust, the magic of Monaco lies in its color-changing properties. The butterfly pea blossom floating atop the rose Champagne layer shifts hues from purple to blue to pink as the drink evolves.

Flavor notes are equally layered, led by Belvedere Lemon Basil Vodka and St-Germain.

Sun Sign at PISCES Bar & Seafare

The bold, playful cocktail program at PISCES Bar & Seafare ranks among Mercer Boarini’s favorites. While many guests recognize the venue’s Instagram-famous blowfish glassware, the story behind the Sun Sign runs deeper.

The drink features a house-created “super pink guava” blend — combining pink guava juice, guava purée, and quince jam — layered with reposado tequila and Chinola passion fruit liqueur. The vibrant profile mirrors the theatrical energy of the Lake of Dreams and the restaurant’s nautical spirit.

Obsidian at Casa Playa

To complement Chef Sarah Thompson’s delicate, seafood-forward Mexican cuisine, Mercer Boarini crafted the Obsidian at Casa Playa, a margarita designed with precision and depth. Its name references the volcanic mineral in which agave thrives.

This spicy cucumber margarita features Casamigos reposado tequila and agave nectar, accented by Ancho Reyes Verde poblano liqueur. A black sea salt rim and Tajín-dusted cucumber garnish complete the presentation.

The Kylie at Delilah

Star power shines in this floral showpiece. Named for Kylie Jenner, The Kylie at Delilah reflects Mercer Boarini’s vision of “a beautiful cocktail for a beautiful muse” and remains one of her personal favorites.

“I feel like it can only be done at Wynn,” she says of the intensive, more-than-48-hour preparation process. “It’s this group effort of absolute luxury that can show the scale of how we do things at Wynn.”

The clarified margarita blends 818 Blanco tequila with citrus and stone fruit notes — including Giffard Pêche de Vigne, lemon, lime, and pineapple. Each glass is finished with a hand-crafted floral mosaic designed to resemble stained glass.

When tasked with creating an “iconic” cocktail for Overlook Lounge, Mercer Boarini looked to a timeless spritz for inspiration. The Aurora serves as a tropical cousin to the Aperol Spritz, maintaining its familiar silhouette while introducing a fruit-forward twist.

Passion fruit pearls garnish the drink, while a custom Amalfi Mist edible perfume — featuring orange blossom, bergamot, grapefruit, and Sicilian citrus — adds an aromatic flourish. The result captures the glamour and icon-driven spirit that defines the Overlook Lounge cocktail program.

Wabi-Sabi at Mizumi

At Mizumi, Mercer Boarini designed the cocktail menu around Japanese aesthetic philosophy. The Wabi-Sabi embodies the concept of finding beauty in imperfection.

This Old Fashioned–inspired cocktail features Japanese whisky from Niigata Prefecture, aged in a blend of American, Japanese, and European barrels. Okinawan black sugar provides a historic depth of sweetness, complemented by toasted rice, red date, and sencha bitters.
