"There’s Las Vegas, and then there’s Wynn Las Vegas," says Scott Sartiano, arguably the 21st century’s most successful hospitality magnate. His company, Bond Hospitality, currently operates 10 projects, primarily in Manhattan, most notably the private members social club Zero Bond and the soulful Italian eatery Sartiano's. In March, he brought both flagship enterprises to Wynn Las Vegas: Zero Bond Las Vegas and Sartiano's Italian Steakhouse, which are adjacent and overlook the 18th fairway of Wynn Golf Club.
"We met with the Wynn people early on," Sartiano recalls. "They wanted something a little different from all the other food and beverage concepts that were in Vegas, and a members club is a relatively new concept in the United States. They thought that it was something that could work in Las Vegas, given the right opportunity. The opportunity to do something within the Wynn property was something that I couldn't pass up."
Zero Bond is a private members social club with an extensive membership waitlist. The New York location, founded in 2020 in a NoHo loft dating to the 1870s, is recognized for both exclusivity and privacy. No photographs are permitted, and all prospective members participate in a rigorous application process.
The same approach applies in Las Vegas. Members gain access to a highly curated club experience that includes sought-after amenities, private events, a contemporary American restaurant called The Fairway Grill, and upscale facilities throughout the 14,000-square-foot space situated in what was once one of the villas along Wynn Golf Club.
The Fairway Grill offers a dedicated sushi chef and menu highlights such as miso sea bass, Dover sole, American wagyu New York strip, roasted rack of lamb, and the signature Zero Bond Burger. With 56 indoor seats and 32 outdoor seats overlooking the golf course, the Las Vegas club also introduces tableside service, shareable plates, and a prime rib cart.

"There are so many aspects that you can't get anywhere else," Sartiano says of the Las Vegas location. "You have our own private valet in the back, so you don't have to necessarily go through the casino to get there. You have a lot of indoor and outdoor space, and the amenities. It's really meant to be a kind of oasis on the Strip for locals. And we obviously think that people who aren't locals are going to enjoy it as well, but we really spent a lot of focus on what's missing for the local clientele."
Amenities include all-day dining, a refined salon for conversation and cocktails, a Disco Bébé lounge for music and dancing, a penthouse for viewing experiences, private wine lockers, a bespoke indoor and outdoor cigar lounge, a screening room, and a contemporary sculpture garden. Members also enjoy access to exclusive parties during the city's most significant moments, concierge services, and special cultural events.
"It's going to become iconic because we will be the first to do the private members club in Las Vegas with Zero Bond," Sartiano says. "I'm given credit for having been the first to do this concept in New York, but there were older clubs when we opened Zero Bond. We just created a new way to do it. If you're giving people experiences they haven't fully had before, that's the first step to being iconic.
"Everything that our whole team does, we really want it to be the best. Every detail. Everything you touch. Everything you feel. We want you to feel the weight of every glass, so you sense you're in this special place. You just go from there and grow and try to keep it consistent for as long as you can. Hopefully, it turns out to be iconic. I think the first thing you experience is the actual space, and as soon as you walk into Wynn, it feels iconic already."
Unlike the members-only Zero Bond Las Vegas, Sartiano's Italian Steakhouse is open to the public and is already gaining a loyal following.
Perhaps that is because, despite their differences, both concepts are guided by Alfred Portale, Bond Hospitality's culinary director. Portale is a three-time James Beard Award-winning chef, restaurateur, and cookbook author who is widely recognized as a pioneering figure in the New American cuisine movement.
When it came to bringing Sartiano's to Las Vegas, Portale understood what would set it apart, beginning with a robust steak program highlighting a range of options, including a 40-ounce dry-aged bistecca alla Fiorentina carved tableside, American wagyu filet mignon, and New York strip.

"Whenever you go into a new market, you have to be aware of what the wants and needs are there," Portale explains. "Steak is very important in Las Vegas. To a lot of the clientele, the idea of a celebratory or great dinner out is at a steakhouse. So the steak component was very important for those two reasons."

Las Vegas native and industry veteran Michael Rubinstein serves as executive chef. Mariena Mercer Boarini, Wynn's master mixologist and a 2026 James Beard Foundation Award semifinalist, oversees the beverage program with imaginative cocktails, a dedicated martini menu, and thoughtful zero-proof options.
Otherwise, the menu mirrors Sartiano's New York location, particularly its focus on the namesake's Neapolitan heritage. Signature dishes include caviar cannoli, veal chop parmigiana, and lasagna with wild mushroom and black truffle. A raw bar, another highlight not available in New York, features seafood towers, king crab, poached lobster, and oysters.

"In both Zero Bond and Sartiano's Italian Steakhouse, we offer a broad menu that really appeals to a lot of different palates and people," Portale says. "Basically, we try to do a lot of the Italian and Italian-American classics, but we employ really modern techniques and use the finest ingredients. We're drawing on the passion and flavors of Italy with the precision of French cooking."

Unlike the Manhattan location's contemporary New York loft aesthetic, Sartiano's Italian Steakhouse at Wynn Las Vegas resembles a Tuscan wine cellar. Located in an exclusive alcove overlooking the golf course, the restaurant features high ceilings, inlaid floors, imported marble, stone, and wood, muted colors, and hand-painted artwork depicting the Italian countryside.
"It's not a massive restaurant like you often find in Las Vegas," Portale says. "It's only 120 or so seats with a few outdoor tables. The views, the natural light, the high ceilings, the finishes—it's just absolutely stunning. There's nothing like it in Las Vegas."
Sartiano agrees.
"There is a feeling of intimacy and togetherness here," he says. "A lot of other places don't have that. The restaurant is not too large. It's really beautifully done. It's just breathtaking."
With two of his signature concepts now open in the West, Sartiano is eager to usher in a new era of hospitality.
"From the second you walk in the door, Wynn feels different: every detail, from design to service, the people working there, the crowds," he says. "They've curated the restaurants incredibly well. The live entertainment is the best in town. It really is so well done. But Wynn's success is at record levels. And the reason for that is because today people will pay extra for the best, and Wynn is the best in Las Vegas for hospitality."
