DeMarco leads the kitchen at La Cave with a philosophy rooted in social dining and bold, approachable flavors. A Long Island native, he discovered his love of restaurants while working in his family's neighborhood pizzeria before graduating from the Florida Culinary Institute. After building his culinary career in Las Vegas, DeMarco joined the Morton Group. At La Cave, he has created a menu built entirely around shareable plates, encouraging guests to explore a wide range of flavors together.
